Blueberry Rhubarb Muffins

Hey Trinkets Fans!! Back by popular demand is our blog series of recipes! I started this during our first Covid Lockdown just as a way for us to stay connected. As most of you know when you visit Trinkets Gift Shoppe, you may enter as a client but you leave as a friend. Not only did the blog posts bring us together, they have been a sensational hit! Now with many of you asking for the return of my recipes... what can I say? Anything for my dear friends!!

This week's recipe is a tried and true favourite at my house! Plus with Rhubarb now coming on for a second picking its perfect timing!! Trust me, this recipe will have you whistling as you skip out to the rhubarb patch OR to your local Farmers Market!

Blueberry Rhubarb Muffins

2 cups all purpose flour
2 tsp baking powder 
3/4 cup white sugar
1/2 tsp baking sofa
1/2 tsp salt
Mix all together in a large bowl
2 eggs
1/2 cup sour cream or yogurt (I use vanilla zero fat yogurt)
1/2 cup milk
1/2 cup oil or melted butter
1 tsp vanilla 
Add wet ingredients to dry and add 2 cups of fresh rhubarb 1 cup fresh blueberries and the zest of 1 orange
Bake at 350F for approx 25 mins
Makes a dozen muffins.
These muffins are great to share, and can be frozen to enjoy later.
