Chocolate Zucchini Muffins

I hope you all had a wonderful Thanksgiving! We all have so much to be thankful for! A day filled with laughter and love of family and friends is one of the greatest gifts, in my opinion!
Today I am sharing one of my fall favourite recipes... Chocolate Zucchini Muffins!! This recipe was past down to me from my Great Aunt Carolyn Holden. Super moist, chocolatey and you almost forget they are a little healthy with the added zucchini! Its very easy and I am never disappointed!
1. Pre-heat oven to 400 degrees F
2. Combine in a large bowl
2 1/2 cups flour
1 1/2 cups white sugar
1/3 cup cocoa
2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup shredded zucchini
3. Combine in separate bowl
1 cup sour cream or yogurt (I use zero fat vanilla)
1/2 cup vegetable oil
2 eggs
1/4 cup milk
4. Add wet to dry mixture and stir till blended well.
*** Its at this stage you would add 1 cup of semi sweet chocolate chips should you wish to make these double chocolate zucchini muffins.
5. Fill 12 large lined muffin cups
6. Bake for 25 to 30 mins.
I just love the little hint of cinnamon in each bite! Enjoy Trinkets Fans!!
