Cupcakes with Butter Cream Icing!

 

Hey Trinkets Fans!!

On these super hot days there is nothing like cooling off at the end of the day with a nice treat! So I thought I would share an easy recipe that goes together easily and you can get any kids in the house involved with decorating. It may be too hot to play outside but that won't stop you from playing in the kitchen!

For this recipe we are going to keep it nice and easy! Choose your favourite box cake mix and follow the instructions. Most box mixes make 12 to 24 cupcakes depending on how high you fill the liners. In my house, with grown children and a husband, I do tend to be a little generous with filling and make the large ones. Once you have the cupcakes out of the oven cooling, its time to make the buttercream icing.

This icing recipe has been in my family for years and is my all time favourite to make.Trust me when I say you'll want to call dibs on licking the spoon!!

Buttercream ICING

You will need...

1/2 cup butter, room temp

3 cups icing sugar

4 tbsp cream (or milk)

1 tsp vanilla 

Cream butter, start first with a large spoon then use your electric mixer. Then add your remaining ingredients and mix well. soon it will be white, sweet and fluffy! 

If the cupcakes are completely cooled it's time to decorate!!. I personally like to use a large spoon and spoon onto each cupcake then spread around. It gives it a nice swirl look. This is where it gets interesting.. SKY IS THE LIMIT!!! You can add ANYTHING to garnish! Sprinkles, Smarties, M&M's, Nuts, Fruit... Its all delicious!!
